After spending many years making cakes for friends and family, the idea of starting Ruby & Belle Cakes was a natural and exciting venture. I’m also a hopeless romantic and love to hear about what brought people together. I feel privileged to bring my obsession for cake making and genuine interest in people together, resulting in wedding cakes inspired by love. When designing a cake I also take inspiration from many different arenas – nature, textile, fashion and of course, you.
I make a limited number of cakes each month, so that I can dedicate the time needed to make your cake as special as your big day. The personal service that Ruby & Belle Cakes can offer gives exceptional quality and exclusivity to your cake as it will be handmade by me from start to finish. I use only the very finest ingredients and prefer to use organic, natural products where available. I use a beautiful light buttercream to fill the cakes, along with locally sourced fruit preserve to compliment many of the flavour options. Unless otherwise requested, I use chocolate ganache to cover the cake which gives a firm texture and holds the shape well, allowing me to create a smooth finish. And finally, I use Carma Massa fondant to cover the cake which is of excellent quality and taste.
